Basque cooking has now hit the limelight – and it’s easy to understand why. A unique mix of tradition and modern cuisine, with an unending focus on local and seasonal foods. In Northern Spain, that means you have many ingredients to choose from, as Basque cuisine is influenced by the abundance of produce from the sea on one side and the fertile Ebro valley on the other. The French and Spanish influence is strong also, with a noted difference between the cuisine of either side of the modern border – as well as eating traditions, such as Tapas. Basques have also been quick to absorb new ingredients and techniques from new settlers and from their own trade and exploration links. With all this to choose from, there is no end to the possibilities in the kitchen. Come join us, and learn a few. Recipes may include: Marinated Mussels, Basque Red Bean Stew, Blistered Peppers with Aioli, Mushroom Paella, and Carmalized Condensed Milk.

You may cancel your registration for a class up to one week in advance of the class starting time. One week is often enough time for us to fill the vacated slots or to contact people on our wait lists. If it is after the 1 week deadline, you should call us and see if we have enough people still on the wait list to fill your vacated slot, but there is no guarantee.
